A few nights ago I made chocolate coconut chia seed pudding. I got the recipe from here, but there’s a few others floating around. Basically all it is is chia seeds, milk (in my case I used skim milk instead of almond milk), and a sweetener (honey for me), and then you add in whatever flavorings.
I was a little weirded out when I first tried it, because the appearance and texture are… interesting. It’s sort of the texture of rice pudding. After I got over it though it’s actually pretty good. I recommend it IF you like the texture of rice pudding. Like I said, it’s pretty funky if you’re not used to it but delicious. I’ve been looking for a dessert recipe that was easy to make and healthy, and I think I’ve found it. Obviously this is best if you let it sit overnight but even 3-4 hours should be good.

  3. thesocialaddiction said: If you toast the coconut flakes in the oven you get an extra burst of flavor and sweetness and texture. If u do toast keep an eye out for it cause it burns easily. And stir/toss for even toasting.
